Homemade Baked Feta Pasta with Spinach

This creamy and flavorful baked feta pasta with spinach is an easy, comforting dish combining tangy feta, fresh spinach, and tender pasta baked to perfection.

Ingredients

  • 200g cherry tomatoes
  • 150g block feta cheese
  • 3 cloves garlic, minced
  • 200g pasta (penne or fusilli)
  • 2 cups fresh spinach leaves
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place cherry tomatoes, feta block, and minced garlic in a baking dish. Drizzle with olive oil and sprinkle with salt, pepper, and red pepper flakes if using.
  3. Bake uncovered for 30 minutes, until tomatoes burst and feta softens.
  4. Meanwhile, cook pasta according to package instructions until al dente. Drain and set aside.
  5. Remove the baking dish from oven and stir the roasted feta and tomatoes until combined into a creamy sauce.
  6. Add fresh spinach to the baking dish and stir to wilt it slightly in the residual heat.
  7. Toss cooked pasta into the feta and spinach sauce until well coated.
  8. Garnish with fresh basil leaves and serve immediately.

Notes

For extra flavor, drizzle with a bit of balsamic glaze or add sautéed mushrooms before serving.
