Queso

Freshly prepared creamy queso on white plate

Queso is a creamy and flavorful melted cheese dip perfect for snacking or adding a spicy touch to Mexican dishes.

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups shredded white American cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup evaporated milk
  • 1 small can (4 oz) diced green chilies
  • 1 jalapeño, seeded and finely chopped (optional)
  • 1/4 teaspoon cumin
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Melt the butter in a medium skillet over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes.
  2. Reduce the heat to low and gradually add the shredded cheeses, stirring constantly to melt evenly.
  3. Slowly pour in the evaporated milk, stirring continuously until all cheese is melted and the mixture is smooth.
  4. Stir in the diced green chilies, jalapeño (if using), and cumin. Cook for an additional 2 minutes, allowing flavors to meld.
  5. Season with salt to taste and remove from heat.
  6. Garnish with fresh cilantro and serve warm with tortilla chips or as a topping for tacos and nachos.

Notes

For a smokier flavor, try adding a pinch of smoked paprika or substitute some of the cheese with smoked cheddar.
