Buffalo Chickpea Wraps

These Buffalo Chickpea Wraps are a flavorful and healthy twist on classic buffalo wings, featuring spicy chickpeas wrapped in a soft tortilla with fresh veggies and creamy dressing.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp buffalo sauce
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup shredded carrot
  • 1/4 cup blue cheese or ranch dressing

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss chickpeas with olive oil, buffalo sauce, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread chickpeas in a single layer on the baking sheet and bake for 20 minutes, shaking the pan halfway through, until crispy.
  4. Warm the tortillas slightly in a dry skillet or microwave.
  5. Assemble each wrap by layering shredded lettuce, roasted buffalo chickpeas, diced tomatoes, red onion, and shredded carrot.
  6. Drizzle with blue cheese or ranch dressing.
  7. Roll up the tortillas tightly, slice in half if desired, and serve immediately.

Notes

For extra crunch, add sliced celery or cucumber to the wrap, or substitute buffalo sauce with your favorite hot sauce for different heat levels.
