Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 tbsp all-purpose flour
  • 2 tbsp instant coffee granules dissolved in 1 tbsp hot water
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture firmly into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy.
  4. Add eggs one at a time, beating well after each addition.
  5. Blend in sour cream, flour, dissolved coffee, and vanilla until fully incorporated.
  6. Pour half of the batter over the crust in the pan.
  7. Drizzle half the caramel sauce over the batter and gently swirl with a knife to create a marbled effect.
  8. Pour the remaining batter over the caramel layer.
  9. Repeat drizzling and swirling with the remaining caramel sauce.
  10. Bake cheesecake for 55–65 minutes, or until the center is almost set but still slightly jiggly.
  11. While baking, heat chocolate chips and heavy cream in a small saucepan over low heat, stirring constantly until smooth to make chocolate ganache.
  12. Remove cheesecake from oven and let cool to room temperature, then refrigerate at least 4 hours or overnight.
  13. Before serving, spread the chocolate ganache over the top of the cheesecake and chill until set.
  14. Slice and serve chilled.
