Cheesy Taco Tater Tot Bake

A delicious and hearty casserole featuring crispy tater tots, seasoned taco beef, and melted cheese, perfect for a comforting weeknight dinner.

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup diced onions
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/2 cup sour cream (for serving)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onions and cook until translucent.
  3. Add ground beef to the skillet, cook until browned. Drain excess fat.
  4. Stir in taco seasoning and a splash of water, cook for 2-3 minutes until well combined. Remove from heat.
  5. In a baking dish, spread the cooked taco beef evenly.
  6. Layer the frozen tater tots evenly over the beef.
  7. Sprinkle diced tomatoes and black olives over the tater tots.
  8. Top with shredded cheddar and Monterey Jack cheeses.
  9. Bake uncovered for 25-30 minutes or until tater tots are golden and cheese is melted and bubbly.
  10. Remove from oven, let cool for 5 minutes, then serve with sour cream.

Notes

For extra flavor, garnish with chopped fresh cilantro and serve with your favorite salsa or guacamole.
