Chocolate Strawberry Heart Cupcakes

Delight in these moist chocolate cupcakes filled with a luscious strawberry heart center and topped with creamy strawberry frosting, perfect for any romantic occasion.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 cup powdered sugar
  • 3 tbsp unsalted butter, softened (for frosting)
  • 2 tbsp heavy cream (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  5. Fill each cupcake liner halfway with batter. Place a small spoonful of strawberry jam and chopped strawberries in the center, then cover with more batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the cake (avoiding the strawberry center) comes out clean.
  7. Allow cupcakes to cool completely before frosting.
  8. For the frosting, beat softened butter until creamy. Gradually add powdered sugar and strawberry jam, then add heavy cream to reach desired consistency.
  9. Pipe or spread frosting onto cooled cupcakes and decorate with a fresh strawberry slice if desired.

Notes

For an extra surprise, freeze diced strawberries before baking to preserve their shape and create a more defined heart center.
