Citrus Chicken Thighs

Juicy chicken thighs infused with bright citrus flavors, perfect for a vibrant and easy weeknight dinner.

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 orange, juiced and zested
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme or parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together orange juice and zest, lemon juice and zest, garlic, olive oil, honey, smoked paprika, salt, and pepper.
  3. Place chicken thighs in a baking dish and pour the citrus marinade over them, coating well. Let marinate for 15 minutes if time permits.
  4. Bake chicken thighs in the preheated oven for 35-40 minutes until cooked through and skin is crispy.
  5. Baste with pan juices halfway through cooking for extra flavor and moisture.
  6. Garnish with fresh thyme or parsley and serve warm.

Notes

For an extra layer of flavor, add a splash of white wine to the marinade or serve with a side of roasted vegetables.
