Coconut Curry Baked Cod features tender cod fillets baked in a fragrant coconut curry sauce, delivering a rich and flavorful seafood dish perfect for a healthy dinner.

  • 4 cod fillets (about 6 oz each)
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro leaves, for garnish
  • Cooked jasmine rice, to serve

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in the red curry paste and cook for 1-2 minutes.
  5. Pour in the coconut milk, lime juice, and brown sugar. Stir to combine and simmer for 5 minutes.
  6. Season cod fillets with salt and pepper and place them in a baking dish.
  7. Pour the coconut curry sauce evenly over the cod fillets.
  8. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Remove from the oven and garnish with fresh cilantro leaves.
  10. Serve hot with cooked jasmine rice.

Notes

For extra heat, add a sliced red chili to the curry sauce or serve with a side of steamed vegetables.
