Cold Sesame Noodles

Cold Sesame Noodles are a refreshing and flavorful dish featuring tender noodles tossed in a creamy, nutty sesame sauce, perfect for a quick lunch or light dinner.

  • 8 oz spaghetti or Chinese egg noodles
  • 3 tbsp tahini or sesame paste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or sugar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp chili garlic sauce (optional)
  • 2 green onions, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 1/4 cup shredded carrot (optional)
  • 1/4 cup chopped cucumber (optional)

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to cool; drain well.
  2. In a bowl, whisk together tahini, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and chili garlic sauce until smooth.
  3. Place the cooled noodles in a large mixing bowl and pour the sesame dressing over them. Toss well to coat evenly.
  4. Add sliced green onions, toasted sesame seeds, and any optional vegetables like shredded carrot or cucumber. Toss gently.
  5. Chill the noodles in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
  6. Serve cold or at room temperature as a refreshing main or side dish.

Notes

For extra protein, top with grilled chicken, tofu, or a soft-boiled egg. Adjust the chili garlic sauce to your preferred spice level.
