Cowboy Caviar

Cowboy Caviar is a colorful, zesty salad featuring fresh beans, corn, and vegetables tossed in a tangy lime-cilantro dressing, perfect as a snack or side dish.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, tomatoes, red bell pepper, red onion, jalapeño, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, red wine vinegar, cumin, salt, and pepper until well combined.
  3. Pour the dressing over the bean mixture and toss gently to coat all ingredients evenly.
  4. Cover and refrigerate for at least 1 hour to let flavors meld.
  5. Serve chilled or at room temperature with tortilla chips or as a side dish.

Notes

For added crunch, sprinkle with chopped green onions or serve as a topping for grilled chicken or tacos.
