  • 2 cups cooked butter beans (or 1 can, drained and rinsed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 1/4 cup heavy cream or coconut cream
  • 1 teaspoon lemon juice
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. In a large skillet over medium heat, melt the butter until foaming.
  2. Add the chopped onion and sauté for 4-5 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Whisk the miso paste into the vegetable broth until smooth, then pour into the skillet.
  5. Add the cooked butter beans and stir to combine.
  6. Pour in the heavy cream and gently stir, allowing the mixture to warm and thicken for about 3-4 minutes.
  7. Season with lemon juice, salt, and pepper to taste.
  8. Remove from heat and garnish with chopped parsley if using.
  9. Serve warm as a side dish or a creamy main with crusty bread.

Notes

For a vegan version, substitute butter with olive oil and use coconut cream instead of heavy cream. Adding a sprinkle of toasted sesame seeds on top enhances the miso flavor.
