This creamy roast garlic and lemon pasta sauce offers a luscious blend of roasted garlic sweetness and bright citrus notes, perfect for elevating any pasta dish with rich, velvety flavor.

  • 1 whole bulb of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 12 ounces cooked pasta (such as fettuccine or linguine)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
  2. Once cooled, squeeze the roasted garlic cloves out of their skins into a blender or bowl.
  3. In a pan over medium heat, warm the remaining 1 tablespoon olive oil then add the roasted garlic, stirring to combine.
  4. Pour in the heavy cream, and stir until warmed through but not boiling.
  5. Add Parmesan cheese, lemon zest, lemon juice, salt, and black pepper; mix until the cheese melts and sauce thickens slightly.
  6. Toss cooked pasta in the sauce until evenly coated.
  7. Garnish with chopped fresh parsley and serve immediately.

Notes

For an extra touch, sprinkle toasted pine nuts on top or add a pinch of red pepper flakes for subtle heat.
