Butter chicken is a rich and creamy Indian dish featuring tender chicken cooked in a spiced tomato and butter sauce, perfect for a comforting meal.

  • 1 lb boneless chicken thighs, cut into chunks
  • 3 tbsp butter
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • Salt to taste
  • 1 tbsp vegetable oil
  • Fresh cilantro for garnish
  • 1/4 cup water

Instructions

  1. Heat oil and 1 tbsp butter in a skillet over medium heat. Add chopped onions and sauté until golden.
  2. Add garlic and ginger; cook for another minute until fragrant.
  3. Add tomato puree, spices (garam masala, cumin, chili powder, turmeric, paprika), and salt. Cook the sauce for 10 minutes, stirring occasionally.
  4. In a separate pan, lightly sear chicken chunks until browned but not fully cooked.
  5. Add the chicken to the sauce along with water, cover, and simmer 15 minutes until chicken is cooked through.
  6. Stir in heavy cream and remaining butter. Simmer for 5 more minutes to thicken the sauce.
  7. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

For extra richness, marinate the chicken in yogurt and spices for a few hours before cooking.
