Potato Soup

A creamy and comforting potato soup made with tender potatoes, savory broth, and a touch of cream, perfect for a cozy meal any day.

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 stalks celery, chopped
  • 1 carrot, diced
  • Optional: chopped chives or shredded cheddar cheese for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion, celery, carrot, and garlic; cook until softened, about 5 minutes.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. Use an immersion blender to puree the soup until smooth, or mash some potatoes for a chunkier texture.
  4. Stir in heavy cream and heat through without boiling.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and garnish with chives or cheddar cheese if desired.

Notes

For extra flavor, add crispy bacon bits or a dollop of sour cream when serving.
