  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp butter
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 8 oz egg noodles, cooked
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. In a large skillet, melt butter over medium heat. Add chopped onions and garlic, sauté until fragrant and translucent.
  2. Add the ground beef, breaking it up with a spoon, and cook until browned and cooked through. Drain excess fat if needed.
  3. Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown.
  4. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Simmer for 5 minutes to reduce slightly.
  5. Lower the heat and stir in the sour cream, mixing until the sauce is creamy and heated through. Do not boil.
  6. Season with salt and pepper to taste.
  7. Serve the beef stroganoff over cooked egg noodles and garnish with fresh parsley if desired.

Notes

For an extra creamy texture, add a splash of heavy cream along with the sour cream. Serve with steamed green beans or a simple salad for a complete meal.
