Loaded Beef Potato Casserole

A hearty and comforting casserole packed with savory ground beef, tender potatoes, melted cheese, and flavorful toppings perfect for a satisfying dinner.

  • 1 lb ground beef
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 1/4 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil diced potatoes in salted water for about 10 minutes until tender; drain and mash with milk and sour cream.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until translucent.
  4. Add ground beef, salt, pepper, and paprika; cook until beef is browned and cooked through.
  5. In a greased casserole dish, layer half of the mashed potatoes, then the cooked ground beef mixture.
  6. Top with remaining mashed potatoes, shredded cheddar cheese, crumbled bacon, and chopped green onions.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  8. Remove from oven and let cool slightly before serving.

Notes

For extra flavor, add a dash of hot sauce or chopped jalapeños before baking, and serve with a side salad for a complete meal.
