Maque Choux With Sausage Corn is a flavorful Cajun skillet dish combining tender corn, smoky sausage, and aromatic vegetables for a comforting Southern meal.

  • 4 ears fresh corn, kernels removed
  • 1 lb smoked Andouille sausage, sliced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1/2 cup diced tomatoes (optional)
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat vegetable oil and butter in a large skillet over medium heat.
  2. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same skillet, add onions, green and red bell peppers; sauté until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in the fresh corn kernels and cook for 5-7 minutes until tender, stirring occasionally.
  6. Add diced tomatoes (if using), cayenne pepper, smoked paprika, salt, and black pepper. Mix well.
  7. Return the sausage to the skillet and cook together for another 3-4 minutes to blend flavors.
  8. Sprinkle chopped fresh parsley over the dish before serving.

Notes

For extra creaminess, stir in a splash of heavy cream or a pat of butter just before serving.
