One-Pot Lamb Kalya with Yogurt and Cream

  • 1 lb lamb shoulder, cut into cubes
  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 tbsp ghee or vegetable oil
  • 1 large onion, finely sliced
  • 3 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit lengthwise
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • Salt, to taste
  • 1 cup water or lamb stock
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat ghee or oil in a large heavy-bottom pot over medium heat. Add mustard and cumin seeds and sauté until they begin to pop.
  2. Add sliced onions and cook until golden brown.
  3. Stir in garlic, ginger, and green chilies; cook for 2 minutes until fragrant.
  4. Add lamb pieces and sear until browned on all sides.
  5. Mix in coriander, turmeric, red chili powder, and salt. Cook for 2 minutes.
  6. Lower the heat and stir in the yogurt slowly, ensuring it does not curdle.
  7. Add water or lamb stock, cover the pot, and simmer on low heat for 1 to 1.5 hours until lamb is tender.
  8. Stir in heavy cream and garam masala, cook uncovered for an additional 10 minutes to thicken the sauce.
  9. Garnish with fresh cilantro and serve hot with rice or flatbreads.

Notes

For extra richness, garnish with a drizzle of additional cream or toasted nuts. This dish pairs beautifully with warm naan or basmati rice.
