Orange Glazed Tempeh Stir Fry

  • 8 oz tempeh, cut into thin strips
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 3 tbsp fresh orange juice
  • 1 tbsp orange zest
  • 2 tbsp maple syrup or honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp vegetable oil
  • 2 green onions, sliced (for garnish)
  • 1 tsp toasted sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together orange juice, orange zest, soy sauce, maple syrup, rice vinegar, and cornstarch slurry. Set aside.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
  3. Add tempeh strips and cook until golden brown on all sides, about 5-7 minutes. Remove tempeh from skillet and set aside.
  4. Add the remaining 1 tablespoon oil to the skillet. Sauté garlic and ginger for about 30 seconds until fragrant.
  5. Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  6. Return tempeh to the skillet and pour the orange glaze sauce over everything.
  7. Cook, stirring frequently, until the sauce thickens and coats the tempeh and vegetables, about 2-3 minutes.
  8. Remove from heat and garnish with sliced green onions and toasted sesame seeds if desired.
  9. Serve hot over steamed rice or noodles.

Notes

For extra protein, serve with a side of quinoa or add cashews for added crunch and flavor.
