Peanut Butter Banana Oat Bars

These Peanut Butter Banana Oat Bars are a wholesome, naturally sweetened snack perfect for breakfast or an energy boost any time of day.

  • 2 ripe bananas
  • 1 cup peanut butter (creamy or chunky)
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, honey (or maple syrup), and vanilla extract to the bananas and mix well until combined.
  4. Stir in the rolled oats, cinnamon, and salt until everything is evenly incorporated.
  5. If using, fold in the mini chocolate chips or chopped nuts.
  6. Press the mixture firmly into the prepared baking pan, spreading it evenly.
  7. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow bars to cool completely in the pan before cutting into squares.
  9. Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.

Notes

For a vegan version, use maple syrup instead of honey and ensure peanut butter is natural and unsweetened.
