  • 4 tbsp unsalted butter, softened
  • 1/2 cup pink champagne
  • 1 large egg
  • 1/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for frosting)
  • 2 tbsp unsalted butter (for frosting), softened
  • 2 tbsp pink champagne (for frosting)
  • 1 tsp cream cheese (optional, for frosting)
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy. Add the egg and vanilla extract, mixing well.
  4. Gradually alternate adding the flour mixture and pink champagne to the butter mixture, beginning and ending with the flour mixture.
  5. Mix in the buttermilk until the batter is smooth and well combined.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove cupcakes from the oven and allow them to cool completely on a wire rack before frosting.
  9. For the frosting, beat powdered sugar with softened butter and cream cheese until creamy. Add pink champagne and pink food coloring as desired, mixing until smooth.
  10. Pipe or spread the frosting on cooled cupcakes and garnish as desired.
