Red Velvet Valentine Cupcakes

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, combine sugar and vegetable oil. Add eggs one at a time, mixing well after each addition.
  4. Stir in red food coloring, vanilla extract, and white vinegar.
  5. Alternate adding the flour mixture and buttermilk to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.
  6. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. Allow cupcakes to cool completely before frosting.
  9. For the frosting, beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, beat until creamy.
  10. Frost the cooled cupcakes generously and decorate as desired.

Notes

For an extra festive touch, sprinkle heart-shaped edible decorations or red sugar crystals on top of the frosting.
