These roasted cauliflower tacos are a flavorful and healthy Mexican-inspired dish featuring perfectly seasoned, caramelized cauliflower florets served in warm tortillas with fresh toppings.

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup shredded red cabbage
  • 1/4 cup fresh cilantro leaves
  • 1 avocado, sliced
  • Fresh lime wedges, for serving
  • Sour cream or Mexican crema, for topping (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 25-30 minutes, turning halfway through, until the cauliflower is golden and tender.
  5. Warm the corn tortillas in a dry skillet or wrapped in foil in the oven.
  6. Assemble the tacos by dividing the roasted cauliflower evenly among the tortillas.
  7. Top with shredded cabbage, avocado slices, cilantro, and a squeeze of lime juice.
  8. Add sour cream or crema if desired, then serve immediately.

Notes

For extra spice, add a dash of hot sauce or sliced jalapeños. These tacos pair well with a side of black beans or Mexican rice.
