These Roasted Red Pepper Hummus Wraps are a vibrant and healthy lunch option, combining creamy hummus with sweet roasted peppers and fresh veggies in a soft wrap.

  • 1 cup roasted red peppers, drained
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 large whole wheat tortillas or wraps
  • 1 cup mixed greens (spinach, arugula)
  • 1 medium cucumber, thinly sliced
  • 1 small carrot, shredded

Instructions

  1. In a food processor, combine roasted red peppers, chickpeas, tahini, lemon juice, garlic, and olive oil.
  2. Blend until smooth, adding water if needed to reach desired hummus consistency.
  3. Season with salt and pepper to taste.
  4. Lay out the tortillas and spread an even layer of the roasted red pepper hummus on each.
  5. Top with mixed greens, cucumber slices, and shredded carrot.
  6. Roll up each tortilla tightly to form wraps.
  7. Slice wraps in half diagonally and serve immediately or wrap in foil for lunch on the go.

Notes

For extra protein, add grilled chicken or tofu slices inside the wrap.
