A vibrant and flavorful Shrimp Scampi Nourish Bowl combining tender shrimp sautéed in garlic butter with fresh vegetables and whole grains for a wholesome, satisfying meal.

  • 12 oz large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1/4 tsp red pepper flakes
  • 2 cups cooked quinoa
  • 1 cup steamed broccoli florets
  • 1 medium carrot, julienned
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque.
  4. Stir in lemon juice, lemon zest, and remaining tablespoon of butter; cook for an additional minute to combine flavors.
  5. In serving bowls, layer the cooked quinoa, steamed broccoli, julienned carrots, and cherry tomatoes.
  6. Top with the shrimp and drizzle any buttery sauce from the skillet over the bowls.
  7. Garnish with chopped fresh parsley and serve warm.

Notes

For extra richness, add a sprinkle of grated Parmesan cheese or a drizzle of extra virgin olive oil before serving.
