  • 3-4 lbs beef chuck roast
  • 1 packet Italian seasoning mix
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp crushed red pepper flakes (optional)
  • 1 cup beef broth
  • 1/2 cup sliced pepperoncini peppers with juice
  • 6-8 Italian sandwich rolls
  • Provolone cheese slices (optional)
  • Fresh Italian parsley, chopped (optional)

Instructions

  1. Place the beef chuck roast into the slow cooker.
  2. In a small bowl, mix the Italian seasoning, garlic powder, onion powder, black pepper, and red pepper flakes.
  3. Rub the seasoning mix all over the beef roast.
  4. Pour beef broth and pepperoncini peppers with juice over the roast.
  5. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  6. Remove the beef from slow cooker and shred using two forks.
  7. Return shredded beef to the slow cooker and stir to combine with the juices.
  8. To serve, pile beef onto Italian rolls, add provolone cheese if desired, and garnish with parsley.
  9. Serve warm with extra juice for dipping.

Notes

For extra flavor, toast the sandwich rolls before assembling and serve with giardiniera for added spice and crunch.
