This Spicy Portuguese Chilli Chicken features tender chicken marinated in a fiery blend of peri-peri spices and garlic, delivering an authentic, bold flavor that’s perfect for a hearty dinner.

  • 4 boneless, skinless chicken thighs
  • 3 tbsp peri-peri sauce
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 4 garlic cloves, minced
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine peri-peri sauce, olive oil, smoked paprika, minced garlic, cayenne pepper, dried oregano, lemon juice, salt, and pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the chicken thighs for 6-8 minutes on each side or until fully cooked and charred in spots.
  5. Remove from heat and let rest for 5 minutes before slicing.
  6. Garnish with fresh parsley and serve hot with your choice of sides.

Notes

For extra heat, add chopped fresh red chilli to the marinade or serve with a spicy peri-peri dipping sauce.
