These Spicy Shrimp Sushi Stacks combine fresh shrimp with zesty mayo and sushi rice layers, creating a vibrant, flavorful bite perfect for entertaining or a gourmet appetizer.

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 12 cooked shrimp, peeled and chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 avocado, diced
  • 1 cucumber, peeled and diced
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon finely chopped green onions
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until water runs clear. Combine rice and water in a pot and bring to a boil, then reduce heat to low and simmer covered for 15 minutes. Remove from heat and let rest, covered, for 10 minutes.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Set aside to cool.
  3. In a separate bowl, combine chopped shrimp with mayonnaise and Sriracha sauce. Mix well to create the spicy shrimp filling.
  4. Prepare diced avocado and cucumber and toss with soy sauce, toasted sesame oil, and green onions.
  5. To assemble, use a ring mold or clean empty can. Layer one-third of the sushi rice at the bottom, gently pressing to compact. Add a layer of the spicy shrimp mixture, then a layer of avocado and cucumber. Repeat layering once more, finishing with a final layer of rice on top.
  6. Carefully remove the mold from the stack. Sprinkle with toasted sesame seeds for garnish.
  7. Serve immediately with extra soy sauce or wasabi, if desired.

Notes

For an extra kick, add finely chopped fresh jalapeño to the spicy shrimp mixture. Serve with pickled ginger for a refreshing contrast.
