This Strawberry Cheesecake Quesadilla is a delightful fusion of creamy cheesecake and fresh strawberries wrapped in a warm, crispy tortilla, perfect for a quick dessert or snack.

  • 2 large flour tortillas
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 tbsp butter
  • Honey or maple syrup, for drizzling (optional)

Instructions

  1. In a small bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Spread the cream cheese mixture evenly over one tortilla.
  3. Layer the sliced strawberries evenly on top of the cream cheese mixture.
  4. Place the second tortilla on top to form a quesadilla.
  5. Heat a skillet over medium heat and melt the butter.
  6. Cook the quesadilla for 2-3 minutes on each side or until the tortilla is golden brown and crispy.
  7. Remove from the skillet and let it cool for a minute before slicing into wedges.
  8. Drizzle honey or maple syrup on top if desired and serve warm.

Notes

For extra crunch, add a sprinkle of chopped nuts inside the quesadilla before cooking or try swapping strawberries for blueberries or raspberries for a different fruity twist.
