Ingredients

  • 1 cup cooked quinoa
  • 1 cup shredded kale
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1/4 avocado, sliced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Optional: 1/4 cup roasted chicken, diced

Instructions

  1. In a large bowl, combine the cooked quinoa and shredded kale.
  2. Add cherry tomatoes, black beans, corn, and avocado slices to the bowl.
  3. If using, fold in the roasted chicken for added protein.
  4. Drizzle olive oil and lime juice over the ingredients.
  5. Toss gently to combine all ingredients evenly.
  6. Season with salt and pepper to taste.
  7. Sprinkle crumbled feta cheese and chopped cilantro on top.
  8. Serve immediately or chill for 15 minutes for a cooler bowl.

Notes

For extra flavor, add a dollop of spicy chipotle sauce or a sprinkle of toasted pumpkin seeds.
