Sweet Potato Brie Cranberry Pecans

A deliciously warm and comforting dish featuring roasted sweet potatoes topped with creamy Brie, tangy cranberries, and crunchy pecans, perfect for a festive appetizer or snack.

  • 2 medium sweet potatoes, peeled and cubed
  • 4 oz Brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/3 cup pecans, roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato cubes with olive oil, cinnamon, salt, and pepper on a baking sheet.
  3. Roast for 25 minutes or until tender and lightly caramelized, turning halfway through.
  4. Remove sweet potatoes from the oven and drizzle with maple syrup.
  5. Top the warm sweet potatoes with slices of Brie cheese and return to the oven for 5 minutes, until Brie softens.
  6. Sprinkle dried cranberries and chopped pecans over the dish before serving.

Notes

For an extra layer of flavor, drizzle with a balsamic glaze just before serving or add fresh herbs like rosemary for garnish.
