Sweet Potato Brussel Hash

A hearty and flavorful Sweet Potato Brussel Hash combining tender sweet potatoes and crispy Brussels sprouts for a wholesome breakfast or side dish.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Optional: 2 eggs for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 8-10 minutes until they begin to soften.
  3. Add onions and garlic, sauté for another 3-4 minutes until fragrant and translucent.
  4. Stir in Brussels sprouts and smoked paprika; cook for an additional 10 minutes, stirring occasionally, until Brussels are tender and slightly crispy.
  5. Season with salt and pepper to taste.
  6. If desired, in a separate pan, fry or poach eggs to serve on top of the hash.
  7. Garnish with fresh parsley and serve warm.

Notes

For extra protein, top the hash with a fried egg or serve alongside avocado slices for a creamy contrast.
