Tortellini Soup

This comforting Italian-inspired Tortellini Soup features tender cheese tortellini simmered in a flavorful broth with fresh vegetables and herbs, perfect for a cozy meal.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth
  • 1 (14-ounce) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 9 ounces cheese tortellini (fresh or refrigerated)
  • 2 cups fresh baby spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until vegetables are tender, about 5 minutes.
  2. Pour in chicken broth and diced tomatoes with their juice. Stir in basil, oregano, salt, and pepper. Bring to a boil.
  3. Add the tortellini to the boiling soup. Cook according to package instructions, usually 3 to 5 minutes, until tortellini are tender.
  4. Stir in baby spinach and cook until wilted, about 1 minute.
  5. Ladle soup into bowls and sprinkle with grated Parmesan cheese before serving.

Notes

For a heartier soup, add cooked Italian sausage or mushrooms. Serve with crusty bread for a complete meal.
