4 large flour tortillas
2 cups cooked turkey, shredded
1/2 cup cranberry sauce
1 1/2 cups shredded mozzarella cheese
1/4 cup chopped green onions
1 tablespoon olive oil or butter
Optional: sour cream or ranch dressing for serving
Instructions
Heat a large skillet over medium heat and add a small amount of olive oil or butter.
Place one tortilla flat in the skillet and sprinkle half of the shredded mozzarella evenly over it.
Evenly distribute shredded turkey and dollops of cranberry sauce over the cheese.
Sprinkle chopped green onions on top, then add the remaining mozzarella cheese.
Top with the second tortilla and press gently.
Cook for 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
Carefully flip the quesadilla and cook another 3-4 minutes until golden and cheese is fully melted.
Remove from skillet, let cool slightly, then cut into wedges.
Serve warm with optional sour cream or ranch dressing on the side.
Notes
For added crunch, try adding some toasted walnuts inside the quesadilla before cooking.
