Veggie Sheet Pan Hash

A vibrant and healthy Veggie Sheet Pan Hash packed with fresh vegetables, perfect for a quick and nourishing breakfast or brunch.

  • 2 cups diced sweet potatoes
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 2 cups fresh spinach
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine diced sweet potatoes, bell peppers, red onion, zucchini, and garlic.
  3. Toss vegetables with olive oil, smoked paprika, cumin, salt, and pepper until evenly coated.
  4. Spread the mixture in a single layer on a large sheet pan.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until vegetables are tender and lightly browned.
  6. Remove the sheet pan from the oven and stir in the fresh spinach, allowing the heat to wilt the leaves.
  7. Sprinkle with chopped parsley if desired, then serve warm.

Notes

For added protein, top the hash with a fried or poached egg before serving.
