Home Cooked White Bean Kale Soup in White Bowl

A hearty and nutritious white bean kale soup, perfect for a comforting meal packed with protein, fiber, and vibrant greens.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 bunch kale, stems removed and chopped
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • Juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; sauté until softened, about 5 minutes.
  2. Add minced garlic and dried thyme; cook for 1 more minute until fragrant.
  3. Pour in vegetable broth and bring to a boil.
  4. Add the white beans and chopped kale to the pot. Reduce heat and simmer for 15 minutes until kale is tender.
  5. Season with salt, black pepper, and red pepper flakes if using.
  6. Stir in lemon juice just before serving to brighten the flavors.
  7. Ladle soup into bowls and serve warm.

Notes

For extra protein, add cooked sausage or shredded chicken. Serve with crusty bread for a full meal.
