Yellow Squash Parmesan

Yellow Squash Parmesan is a delicious and comforting baked dish featuring tender yellow squash layers topped with melted Parmesan and mozzarella cheese, perfect as a simple side or vegetarian main.

  • 3 medium yellow squash, thinly sliced
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup bread crumbs
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss the sliced yellow squash with olive oil, garlic, salt, and pepper.
  3. In a baking dish, layer half of the squash slices evenly.
  4. Sprinkle half of the Parmesan cheese, mozzarella, and bread crumbs over the squash.
  5. Add the remaining squash slices as a second layer.
  6. Top with the remaining cheeses, bread crumbs, and fresh basil.
  7. Bake uncovered for 25-30 minutes or until the top is golden brown and squash is tender.
  8. Let cool for 5 minutes before serving.

Notes

For extra flavor, sprinkle some red pepper flakes before baking or serve with a side of marinara sauce for dipping.
